Honestly, it doesn't get simpler and more delicious than this. Homemade soup is so comforting in the winter months. I usually just grab whatever vegetable looks good, add some stock and cream and call it dinner. The other night I made cauliflower soup and served it with a warm baguette and arugula salad. Here's my recipe for the soup: Smooth and Creamy Cauliflower Soup
2 tbsp butter
2 tbsp olive oil
1 medium onion, diced
1 head of cauliflower, cut into florets
4 cups of vegetable or chicken stock
1 cup of whipping cream
Salt and Pepper to taste
Cook onion in butter and olive oil in a heavy saucepan over moderate heat until the onion is softened. Add a bit of salt to the onions to allow them to sweat. Add the cauliflower and cook for a few more minutes until the cauliflower is nicely coated in the butter and olive oil. Add stock and bring to a simmer. Cover the pot and allow the soup to simmer until the cauliflower is very tender and soft, about 20 minutes.
Puree the soup until very smooth using a hand blender or a regular blender. Be careful as the soup will be very hot. Return soup to the pot if you used a regular blender and add the whipping cream and another chunk of butter. Stir until combined and check for seasoning.
